Acetum helped develop, in collaboration with the AIB (Italian Balsamic Tasters) and CSQA (3rd Party independent certification agency), the “Leaf System” which certifies all their products and today is the most reliable and quality oriented grading system for the Industry of Balsamic Vinegar of Modena PGI.

Acetum is responsible for the largest production of Traditional Balsamic Vinegar of Modena on the premise of the Motta vineyards and cellars.
